The Riso Nano Vialone Veronese I.G.P. (Protect Geographical Indication) is the finest rice of the Verona plain. It is certified and controlled and is grown according to the specification approved by the European Community. It is the result of a careful selection of grains of rice.
The Riso Nano Vialone Veronese I.G.P. is a porous rice that fully absorbs the taste of the seasoning used. It is suitable for all risotto varieties, in particular for risottos with meat, fish and mushrooms.
Made with three ripened apricots, we puree the apricots and cook them down in small batches. We then add freshly roasted, crushed pistachio kernels to give texture & colour.
Using black mission figs, we caramelise the fruit and cook it down slowly to develop a rich, sweet flavour. We then add freshly roasted, crushed almonds to create a wonderful texture.
Using fresh William pears from local farmers, we peel, core and puree the pears and cook them down in small batches. Freshly roasted and chopped hazelnuts are added to give body and flavour.
