Conservas Ortiz revives the traditional method of preserving pilchards.
The Sardina Pilchardus variety of pilchards are preserved using fresh and Traditional methods. They are cleaned by hand, one by one, and fried in virgin olive oil. Preserved pilchards, like Ortiz White tuna, have a flavour which improves with the years, becoming more tender and delicate. As with good wine, Ortiz white tuna and pilchard products can be stored in a “cellar”, as their quality and flavour improves over time.
Mussels from the Ría de Arosa have a distinctive, intense bright orange colour. Thanks to Ortiz careful selection and preservation they also have a great meaty texture.
The size of the mussels depends on the length of time they have grown on the platform, the location of the platform itself, and - above all - the season when they are harvested.
