The roots of the vines stretch out downwards into the clay-laden marine sandstone of the steep slopes of morainic hills dappled with patches of “molera“ a soft citrine rock. The stony soil with various depths allows the roots of the vines to penetrate deep into the ground as far as the bedrock. The grape harvest, rigorously carried out by hand on the steep slopes, the strenuous work, the passionate and continuous confrontation with the extreme terrain bestows the mantle of Heroic Agriculture on this wine.

The grapes are produced within the area recognized as typical for wine growing in Trentino. Gewürztraminer is cultivated on vineyards at the altitude between 200 and 400 m above sea level, on well ventilated slopes, with a good diurnal range and a good sun exposure:...
The growing area comprises that recognised as optimal for the production of typical Trentino quality wines, where Pinto Grigio performs best on alluvial soils in the valley floor and on the mounds of detritus.
WINEMAKING & AGEING
The selection for low-vigour clones and thinning out grapes to restrict yields per vine are pre-requisite for the production of perfectly ripe grapes, which in turn are indispensable for top quality. The berries are gently stemmed (though not broken), softly pressed and subsequently fermented in stainless steel tanks using temperature control, a practice now considered indispensable for producing quality, fruity white wines. After fermentation the wine is matured on the fine lees to enrich it with interesting complex secondary aromas, characteristics which will develop after a few months in the bottle.
